We’re only a week out from D-Day of the War on Christmas Season 2016, and everybody’s getting ready to break out their best culinary chops in an exhausting, though satisfying, weekend of entertaining and being entertained. (Didn’t we have enough of this a month ago?) As if the cooking isn’t enough, we all have to finish shopping, then there’s flitting to and fro for parties, and dealing with extended family, if any of us needs more stress on top of considering the Historic Event scheduled for the 20th of next month.

With all THAT going on, we need our other meals to be simple, savory and soothing. No intimidating lists of ingredients, no fancy techniques. No need to show off, nothing to brag about. Just good food. Shared, hopefully without fanfare, with close family and friends. Not that there’s a difference between the two.

That’s what I have for you this week. Something for those nights you just want to relax with a nice warm meal to wrap yourself around. Well, there’s no soup for you until you hit the kitchen and make this awesome

SILKY SMOOTH ACORN SQUASH SOUP

Serves 4 – 6
Level of Difficulty: 1.5/5
Time: 15 minutes prep, 1.5 hours cooking, 1.75 hours total
Drinkage: Mulled Cider. Repeat as needed.

WHAT YOU NEED!

Ingredientses
Yes . You . CAN!
  • 2 acorn squash
  • 3 Tbls butter
  • 1 large onion, chopped
  • 1 large carrot, peeled and chopped
  • 1 clove garlic, minced
  • 3 1/2 cups chicken stock
  • 1/4 cup half & half
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/8 tsp Cayenne Pepper (optional)
  • salt & pepper, to taste

Cutting board, big knife, little knife, peeler, measuring cup/spoons. One decent sized pot. Some other stuff, probably. What? You thought I knew what I was doing?

WHAT TO DO WITH WHAT YOU NEED:

  • Preheat oven to 400 F (200C).
  • Cut squash in half, scoop out and discard seeds.
  • Place, cut side down, in a baking dish.
  • Add about 1/2 inch water to baking dish.
  • Bake about 45 minutes, until easily pierced with a fork/toothpick.
  • Remove from oven, allow to cool until squash can be handled.
  • Scoop squash out of skin & into bowl.
  • Melt butter in pot over medium-high.
  • Add onion, carrot & garlic, cook until soft, 5 -7 minutes.
  • Pour in chicken stock & add the squash.
  • Bring to a high simmer and cook for 20 minutes, stirring ocassionally.
  • Working in batches, fill stand blender NO MORE THAN half full. Cover and hold down lid, pulse to blend, then run on high to puree the mixture.
  • Return blended soup to pot, bring back to simmer.
  • Stir in Half and Half, nutmeg, cinnamon and Cayenne Pepper; season with salt and pepper. Thin with water or more half and half, if needed.

Go ahead, drool a bit in anticipation. You just made something perfect for a cold winter day: a bit sweet from the squash, a bit savory (maybe even spicy, if you up the spices a bit) from the nutmeg, cinnamon and cayenne pepper. This will warm you from the inside!

Ladle into bowls. If desired, dust lightly with nutmeg. Serve with a warm, crusty bread and mulled cider, then take a nap.

    Very similar to my squash soup, Pink. Main differences are I have never included carrot (good idea! next time!), and I roast the onion (cut in half) and garlic cloves (add later so they don’t burn) with the squash first. More roasty flavor.

    You can also make this soup with eggplant. Roast the halved eggplant – and onion, and later, garlic – and use shrimp or fish stock. Season with liquid Zatarain’s Crab Boil. Mmmm!

    I make acorn squash soup a lot. Warning: when it boils, it explodes like lava, so have the cover handy.

      And when it explodes, it sticks like napalm. Drape the blender with a dish towel, people! The skin you save will be your own.

        Question: why not puree before cooking?

        So: cook carrot onion garlic until soft; put in blender with a cup of (room temperature or chilled) broth. Puree and return to pot. Add cooled pulp of one squash and a cup of broth to blender and puree; add to pot. Repeat. Add remaining broth to pot. Simmer as directed above, about twenty minutes.

        Should work, no? And avoids the exploding sticky molten mass and the temptation to overfill the blender.

        (disclaimer: I’m prone to kitchen accidents, like visiting the emergency room with a great gash in the palm of my hand (and a blood-drenched mango to clean up in the sink once I return), so I like to plan techniques that can reduce exposure to the sorts of kitchen violence I frequently ambush myself with)

          It might work if you used all the broth when you blended. Otherwise, you wouldn’t get the silky smooth texture.

            Nice, thick ribeyes. Grill them up medium rare, then slice about 3/8 inch thick, on an angle. Unexpected, HUGE flavor, and everybody can get the right doneness for them. I’ve got a great rub for beef – I’ll put it up in a reply to you maybe tomorrow in some thread or another.

            Your suggestion would go great for buffet style. But I would still lean towards brisket. It’s a big hunk o beef and could go either sit down or buffet style. And the price is lower than a lot of other cuts. Plus he can get as elaborate and fussy as he wants with the preparation.

    I made the chili from last week’s recipe a couple of days ago. Definitely worth it, though since it’s only me here there’s tons of it. Froze a good portion for later. I’ll see how that works out
    That said, I want to make this soup. Maybe after Christmas.

      Making a big batch of a soup, stew, chili, spaghetti sauce and then freezing most as individual portions is the only way I’ve managed to avoid eating nothing but fast food most of my adult life.

      New laptop advice, in order, (for new users):
      1. Go through and uninstall all the crapware
      2. Customize the interface (desktop, etc) to how you like it
      3. MAKE A BACKUP ONTO DVDS OR SOMETHING – FULL SYSTEM!!!
      4. Make sure that you have some sort of USB or external storage device, for stuff. Cloud backups might work too, but local copies/backups are always helpful.
      5. PASSWORD PROTECT YOUR LAPTOP. Since you are a college type person who is on campus, do not give into the temptation to let people use your laptop. Even your friends, unless you are literally watching over their shoulder. I have witnessed the horror of friends of roommates installing terrible stuff on machines, because they let anyone use them.
      6. Get a nice wireless mouse, and keep a spare battery for it on hand.
      7. Maybe get a kensington lock if you plan on keeping it in your dorm room. Laptops have a tendency to walk away in colleges.

      Also, check out your bookstore for awesome student discounts on software. Try not to pirate software, because these days they have major virus payloads in them.

            Western Digital passport drives are pretty nice, only need one cable to plug in with (provides power and data). Pretty handy with a laptop, since those are pretty limited on USB ports to begin with. They tend to be slightly on the fragile side, so be careful not to drop them, or see if you can get one of those shock proof cases for them. Not that I’m the voice of experience or anything…

    @anwisok:disqus, is there any reason not to use a stick blender and just grind things to a smooth cream soup right in the cooking pot? That would be my instinct (and not merely because the regular blender has lived in a dark deep spot in the cabinet since I got the stick blender), but is there any real difference in how things turn out?

      I’ve used both a blender and a stick blender on my BBQ sauce. I have noticed a difference, the stick blender leaves the product just a little chunkier. If I want smooth smooth, I go with blender. Just my $0.02…

      Immersion blenders are my very bestest friend and work great for pureeing a soup like this!

      If you’re trying to puree something a little more coarse and hard, a blender would be the magic key, but the roasted squash in a recipe like this should already be quite soft and easy to blend to a smooth consistency with an immersion blender

Fill a canning pot with halved tomatoes (skin on), add 1 qt water, bring to a light simmer on the stove top, and then place in the 400 degree oven until reduced by 20%. Let cool and then purees with immersion blender until smooth…

          Can’t beat that at all!

    OT: I used to get a CSA basket when I started cooking (and the ex was a veg); well my Arkie momma ain’t never cooked a squash that didn’t start with Z, so I’d never seen an acorn squash before outside of decorative gourd season. It took a long time to realize, no, don’t even bother trying to peel them. Which means your only option is to slather it with butter and brown sugar and roast for a few days (not necessarily a bad thing). So if you have a friend who can’t cook and wants to “help” it’s a fun prank, like asking my dad to peel tomatoes.

    Further OT: come summer, it was okra by the half-ton, for MONTHS; there is really nothing you can fucking do with okra. Fuck okra. Fresh pea season also only lasts one week, apparently.

      Assuming you don’t already know the trick, if you have wrapping ribbon you can get it very curly and festive by running the flat of your scissors over one side of the ribbon. Works in a pinch. The video isn’t the best, but it gives you an idea of how to do it. I’d recommend running the ribbon along the scissor at least 2 or 3 times to get more curl.

Mom’s isn’t bad, but they’re a bunch of farmers and rednecks and there are so many problems (the cousin who doesn’t really want to live with her husband anymore?) and I haven’t talked to any of them since my marriage in ’11.

            Even when I did live in the ghetto, in my great grandmother’s house that I inherited, in the 1980’s during the Crack Years, I wasn’t afraid. It wasn’t Compton. We knew where the drug dealers lived – the street behind me. They had a “stop and cop”. No crack houses. People came, got their shit and went home. Rinse, repeat. On Sundays, the entrepreneurs also sold alcohol for the drunks who had forgotten to buy their booze on Saturday. Yes, alcohol was the gateway drug. His followers are too stupid to notice who he was appointing to his cabinet. Instead he went with a bunch of right wing nut jobs, even though he’s been a moderate Democrat most of his life. I think at the end of the day, he’s really just a narcissistic asshole.

In my interiority and homebody self, I’m very happy to stay in and work from home, and explore the outside world via books, articles, wonkette and sliding down the various tubes of the interwebs. My dad was very word-smart, and entirely uninterested in travel or holidays: very much a working class, down the pub at the weekend then back home, type.

            I can see tho, how someone can “take after” one parent more than another.
            There are lots of influences, both internal and external, on our delicate psychogeography.

            It’s the same reason some people have different natural sleep rhythms. The late nighters would be the ones to keep watch while the rest sleep, that sort of thing.

            Nurture can be great for taking what’s already there and encouraging one to look at the world in wide eyed wonder or closing off ones mind completely.

            My genre of choice the last few years has been metroidvania, La Mulana holds a rare place as a game I have cheerfully paid for more than once. And Dark Souls was thoroughly chewed up by me too. But I had an unbroken line of systems from 2600 to adulthood then went back and grew a mighty collection for a few years.

            Yes Metroidvania is a portmanteau of those two series. Around the Playstation 1 era Castlevania adopted a more action RPG play style with level ups and an open map you crisscross back and forth on like from the Metroid games. And yeah almost all the trans women I know are some sort of programmer or another.

I don’t want to push given what might be on your plate, but I tend to want to support any trans educator even volunteer. Working with the two transguys in my school has been amazing for me this semester.

            I ask because we’re essentially the same age and 2000 is NOT the same as 2016. It really isn’t. I mean, two of the teachers I’ll eventually work with graduated in the same class as me. Both have been teachers for 11 or 12 years, and, here’s me, a teacher’s aid, just working towards becoming an actual teacher. That’s how being trans fucked me.

            Yet the entire department I’d be in? They love and support me. I went back, and it’s been a major dream for me.

The only thing I can think of is that when Kellyanne first became a character on the show, it was at a point when it seemed like IRL she had just about given up on him (Sep/Oct).     So I just found out that one of the designs I did today looks too close to a fashion house’s collection from a couple years back to ever use. I understand that they and I use the same sources of inspiration but I’m still upset because I always design clothes to be wearable and they really don’t (they have not aged well, at all, and they work on exactly two body types) and now I am worried this will happen again, which has killed my idea to upload some new sketches to DeviantArt.

I’m a screenwriter, and stuff’s just out there in the zeitgeist, and it’s totally common to finish a script and suddenly there are three other scripts or even an already shot movie out there doing the same thing and one of them is from some huge player and you’re just toast, hang it up, the script is useless. It’s terrible! If it’s any consolation, there’s a wonderful, wonderful fantasy writer in England, who wrote, among other charming books, a YA book all about a young wizard who finds magic “between two underground stations,” I think her book was even called “Station 9 1/2” or something, and then, well, Harry Potter, and now SHE looks derivative.

      I don’t care. That’s their personal business.
      My parents divorced acrimoniously and then 10 years later reunited and 10 years after that remarried. They are spending their Golden Years together pretty happily. My mother has learned to speak up for herself and my dad has learned how to better respect her. Bill and Hillary have had a different story, where they have stuck together. If they prefer to live their Golden Years apart, I respect their decision and their privacy.
